Pumpkin Doughnuts

Okay, I'm finally here to write about pumpkin muffins. Once I got the eggs I needed to complete the recipe they were a piece of cake to make, but you need a donut pan as these are baked donuts.

The flavours in these are amazing. My daughter wanted to eat them all. I had one friend close their eyes and "take a moment" while savouring their first bit! LOL The only thing i will say is that the glaze does not store well so if you're not serving them right away (or at least that day) I would recommend you wait on the glaze until needed. Once put into a container the glaze picks up too much moisture and loses consistency. So it doesn't look quite as attractive but still tastes good because the glaze has just soaked down into the donut. Nothing wrong with that!

Baked Pumpkin Spice Doughnuts from BC Liquor Stores TASTE magazine Vol. 18, Issue 3 Fall 2016

Spiced Maple Glaze
2 C icing sugar, sifted
1 tsp cinnamon
3 tbsp milk
1 tbsp maple syrup

Doughnuts
2 C all-purpose flour
4 tsp baking powder
1 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
6 tbsp butter, softened
1/2 C brown sugar
2 eggs
2 tsp vanilla extract
2 tbsp milk
1 C canned pumpkin purée (not pumpkin pie filling)

Preheat oven to 375F. Grease the doughnut pan (makes 12 so uses 2 6 ring pans if you've got them).

In a large bowl mix together the flour, baking powder, salt, cinnamon, nutmeg and ginger. Set aside.

In the bowl of a stand mixer beat the butter and brown sugar until light and fluffy. Gradually add the eggs, milk, vanilla and canned pumpkin. Slowly add in the dry mixture and beat until just combined.

Spoon or pipe (large zip top bags are good for piping) the batter into the doughnut moulds, fill about 2/3 full. Place in preheated oven and bake for 15 mins. or until risen, golden and firm. Allow to cool in the rack for 5 mins then turn out onto a wire rack to cool completely.

For the glaze:
Into a small bowl sift together icing sugar and cinnamon. Add milk and maple syrup, whisking until combined. Dip the top of each doughnut and invert onto a wire rack. Allow glaze to set. Dig in and enjoy!
