Beer Bread
Yes, you read that right! Beer bread! It's a delicious snack bread that comes together quickly, and is perfect for when you have unexpected guests due any minute. Everything comes together in a single bowl, then just takes an hour to bake. As long as you have some beer on hand you can have this bread anytime you want. With the weather we've been having the smell of fresh baking bread is exactly what I need... daily! LOL It has been a miserable winter here on the island and I have been self-medicating with comfort food.
Now, this bread can be made plain, sweet, or savoury. I like savoury so I always add a mix of rosemary, basil, oregano, and crushed red pepper. But you could easily use cinnamon and sugar, just omit the olive oil from the recipe below. Believe me when I say this recipe is the perfect excuse to always keep a couple of beer cans stashed away. You never know when you might get a craving ... once you smell it you'll know exactly what I mean!
Savoury Beer Bread (recipe from Penseys Spices)
3 C (426g) all-purpose flour
1/4 C (50g) sugar
1 1/2 tbsp (20g) baking powder
1 1/2 tsp (10g) salt
1/4 tsp dried basil
1/2 tsp dried rosemary
1/4 tsp garlic powder
1/4-1/2 tsp crushed red pepper
1 tbsp olive oil
12 oz can beer, room temperature
1/4 C (50g) butter, melted
Grease a loaf pan and preheat oven to 375F.
In a large bowl stir together all the dry ingredients. Add in the olive oil and the beer. Mix thoroughly and dump into the prepared loaf pan. Spread it out and pour the melted butter over top.
Bake for 45-55mins. It'll be a glorious golden brown and will smell amazing! Enjoy!!
*If you want to make it your own feel free to mix in some grated cheese (cheddar, gruyere, pepper jack). Or make it sweet by using cinnamon and sugar instead of spices and oil. Add a touch of vanilla as well (make sure you use a lighter beer so you don’t overpower the sweeter flavours).
