Best PB Cookies

When it comes to peanut butter I am pretty choosy. There's only one brand that I love and only one of theirs that I buy with any consistency: Kraft Extra Creamy. It is absolutely THE BEST peanut butter you will ever come across! When I was living in the US a few years ago I pretty much stopped buying peanut butter because I just couldn't find anything I liked.  If I'm that selective about my peanut butter you can imagine how I feel about my peanut butter cookies. Yes, I am a cookie snob! They have to be slightly crusted on the outside and beautifully soft on the inside (just like my chocolate chip cookies). Sally over at Sally's Baking Addiction has the absolute best recipe ever! Hands down. Better even than the recipe that comes on the PB jar. These ones don't require a gallon of milk to unstick your mouth. My own addition of mini Reese's pieces and sea salt just takes them over the top! Feel free to leave out if you wish.

Best Peanut Butter Cookies (adapted from Sally's Baking Addiction)

1 C unsalted butter, room temperature
1 C granulated sugar
3/4 C packed brown sugar
2 eggs
2 tsp vanilla extract
1 C creamy peanut butter
3 C + 2 tbsp all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt
1/2 C Reese's Pieces, chopped or not (optional)
1/3 C granulated sugar (for rolling)
Maldon Sea Salt or Fleur de Sel 

Preheat oven to 350F. Line a baking sheet with parchment and set aside.

In the bowl of a stand mixer fitted with a paddle attachment cream together the butter and both sugars, scraping down the sides as needed. Add the eggs one at a time until combined. Add vanilla and peanut butter. Mix until well combined.

In a small bowl mix together the flour, baking soda, baking powder, and salt. Gradually add to the stand mixer until combined. Fold in the Reese's Pieces.

Shape into 1.5 tbsp balls and roll in sugar. Place on baking sheet and press with a fork (to create the classic PB cookie cross hatches). Sprinkle with Maldon Sea Salt and bake for 12 mins, until edges are just starting to set. Middles will look underdone but trust me! Allow to cool on sheet for 5mins and then remove to a rack to cool fully.
