Cinco de Mayo
Happy Cinco de Mayo everyone! It's taco time!! Or at least it was. Apologies for being late to post (technically issues, but they've been resolved). Guess we'll just have to declare it Cinco de Mayo Weekend!
One of the easy things to whip up for Cinco de Mayo (or any other day) is a batch of fresh salsa. Honestly fresh salsa is just about the easiest thing in the world to make! You probably keep a lot of the ingredients on hand already. Throw it all in a blender and ta-da you have salsa! I'm not talking chunky pico de gallo here, I'm talking smooth "restaurant style" salsa. Pico de gallo has its place and I could eat bowls of it but this? Ugh I love this stuff! There's a place in Houston, Chachi's, their salsa is RIDICULOUS. This isn't that! But until I master a copy of theirs this can easily stand in. Chachi's salsa is smoky and delicious, this one is bright and light, perfect for a summer on the patio with friends, food, and drinks!
So grab your bag of tortilla chips, whip up this salsa and kick back to enjoy an evening with friends!!
Restaurant Style Salsa
1 28oz can whole tomatoes (diced is also fine)
2 tbsp red onion, finely chopped
1 jalapeño, chopped (ribs and seeds removed if you don't want as much heat)
1 tsp cumin
1 1/5 tsp salt
juice from half a lime
handful of cilantro
Throw everything into a blender and pulse to the consistency of your choice.
Be sure to taste and season accordingly.
