Dirt Bombs

With the number of guests we’ve had come through our house in the last month you’d swear I was running a Bed & Breakfast. Between scheduled guests and my husband surprising me with friends of his I may as well be! And since every good B&B offers a continental breakfast of some sort I got up early (not unusual for me) and made a batch of Dirt Bombs. Awful name, but delicious none the less!

This recipe is a Bon Appétit original but I have tweaked it a bit here and there to boost the flavours. Laced with nutmeg, and coated in cinnamon and sugar these muffins taste like a classic old-fashioned doughnut. Perfection!

I’ve upped the nutmeg a bit, as well as boosting the cinnamon in the topping. But that’s about it. Make them regular size, or mini size (just cut the baking time in half) , either way you’ll be glad you added these to your muffin rotation.

(*Mini ones make a good addition to school lunches, which I need to start making again next week. Yikes!)

Cinnamon Sugar Muffins

Dirt Bombs, aka Old Fashioned Donut Muffins (recipe adapted from Bon Appétit)

2 1/4 C all-purpose flour
2 tsp baking powder
1 tsp kosher salt
3/4 tsp nutmeg (adjust up or down, to your taste)
1/2 C unsalted butter, room temp
3/4 C granulated sugar
1 egg
1/4 tsp vanilla
1 C whole milk

Topping:
6 tbsp butter, melted
3/4 tsp cinnamon
1/2 C granulated sugar

In a medium bowl combine the flour, baking powder, salt, and nutmeg.

In bowl of a stand mixer fitted with the paddle attachment cream together the butter, and sugar. Add the egg and vanilla. Scrape sides as needed.

Add in the dry ingredients in 3 parts, alternating with milk in 2 parts (dry, milk, dry, milk, dry). Mix until just combined, scraping sides as needed.

Divide evenly into a greased or lined muffin pan.

Bake at 375F for 30-35mins (until toothpick comes out clean). Or in mini tins for 14mins.

For the topping:
Combine cinnamon and sugar in a small bowl. Set aside.

Once cooled, dip the tops in melted butter, and swirl in cinnamon/sugar mixture to coat.
