Game Day

Thousand apologies for anyone waiting for the sweet and spicy nuts, I dropped the ball on getting the recipe up the other day. Blame my sister! LOL She came over and we ended up having a fairly late night. Then yesterday I worked all day, got kiddo to bed and almost immediately fell asleep myself. But I’m here now!​

Super Bowl is this weekend, I think! And please don’t ask me who’s playing. Honestly I don’t pay attention to the big sporting events for anything except the food. My favourite way to eat is to snack my way through an afternoon with friends and family, so Super Bowl Sunday is the best excuse for that.​ Nuts, wings, soft pretzels, I’ll take it all!

 Sweet and Spicy Nuts (from Food&Wine)

4 C mixed nuts (cashew, pecan, peanut, almond, etc) 
3/4 C granulated sugar
1 tbsp kosher salt
1 tbsp chilli powder (pretty sure I used chipotle chilli powder but can’t remember for sure)
2 tsp cinnamon
2 tsp cayenne powder
1 large egg white

Whisk together the sugar and spices, set aside. 

In a large bowl beat the egg white until frothy. Add in the nuts and spice mix. Coat thoroughly.

Spread out in a single layer onto a baking sheet coated with a thin layer of baking spray.

Bake at 300F for 45mins, stirring once, until well browned. Cool completely on baking sheet, stir now and again to break the clumps.
